Cooking Instructions

Using 1 egg yolk with a tablespoon of water, lightly brush the Wellington to give it an even coat. Place on a baking tray line with the greaseproof paper provided (not aluminium foil) in a preheated oven at 200 degrees C or gas mark 6.

Once cooked, remove the Wellington from the oven and allow to rest for at least 15 minutes before cutting. Using a sharp knife, cut through the centre (to grab a show stopping photo), the cut each slice approx 1inch thick.


Rare - cook for 35 minutes or until the temperature of the wellington is 50 °C

Medium rare - cook for 40 minutes or until the temperature of the wellington is 55 °C

Medium - cook for 45 minutes or until the temperature of the wellington is 60 °C


Cooking time may vary from oven to oven. These are guidelines. Using a food probe is a safe and recommended way to ensure your meat products have reached the correct temperature.
